Pizza Pop - Up
We are crazy about pizza and street food!
After eating our way round Naples we decided to have a 1 metre wood fired oven built and called her Rita. It's a great addition to our event catering company and we can fire her up anywhere!
It starts with the dough, we ferment ours for 24 - 48 hours using 4 ingredients including caputo flour, water, salt and yeast. Topped with the best Italian produce sourced from local suppliers. Our tomatoes are grown on the foothills of Mt.Versuvius, our parmesan is aged for 18 months, we use fior di latte cows mozzarella. We then cook with real fire at 500 degrees giving us a traditional neapolitan pizza.
